The PSS test app could be a PS Studios app or a Playstation Store App. Not sure if it could also mean applet, I have no idea how Epic works and what the requirements are.

How are people figuring out what these codenames refer to?

I'd bet they are just guesses. As an example, part of TLOU2 happens in Salt Lake City (Utah) and it's pretty obvious that Sony will release TLOU2 Remastered on PC some day.

Carrack: it was the type ship of the Spanish and Portguese explorators who "discovered"/invaded America. So this game could be Stellar Blade

Kondo: Marie Kondo: The Video game, Naughty Dog's new IP. Now seriously: there's an important Rise of the Ronin character whose surname is Kondo

Edit: Apparently it allows you to check the URL of the cloud saves, so if lucky they put the real name there. Doing this it shows that SE's skobeloff is FFXVI and confirms that Utah is TLOU2:
