For Steam related things, it's just using SteamDB and the other similar websites and parsing through the data.
For more general things, it's the googlefu in action, like this FF7 stuff.
I saw the thread on ResetEra mentioning the embargo so I just googled "FF7R/FFXVI Embargo date" and reddit/enthusiasts websites would be the first hits and voila. Takes about 10 seconds.
They must be super confident in this game. I cannot wait.
