MG series for one. They seem to be doing that, though.
Onimusha, RE Outbreak, bring the entire PS1 library over. Basically anything from PS1 and 2 consoles as well as a few series from the PS3 era but a lot of those have been ported over.

I'd rather have a remaster of a 7th gen game not on PC than having to brute force a console version through emulation. Besides money going to devs with an official release.
Metal Gear Solid 4, 4K 120fps PS5 version with no loading/install times
Wipeout Alpha Collection: Omega Collection but remaking the stages, ships and music tracks from the earlier Wipeout games for PS5 + PC
Ridge Racer Nitro: remade Ridge Racers 2 adding ALL the content (circuits, cars, music tracks) of the series until the 2011 PS Vita Ridge Racer game, also including a Rage Rager/Ridge Racer Type 4 type career mode
Motorstorm Collection: the three main games plus an Artic Edge + Motorstorm RC DLC remastered/remade for PS5 + PC
Killzone Trilogy: The SP modes of Killzone 1, 2 and 3 remade for PS5 + PC
Killzone Trilogy 2: Liberation, Mercenary and Shadow Fall (SP) remade for PS5 + PC
1. Dot Hack sign vol 1 - 4 is my most wanted remaster. Heck sell them all separate and I would buy every single one of them.
2. Mario & Luigi Collection for the Switch
3. GTA IV
4. Metal Gear Solid IV
5. Metroid Prime 2: Echoes remastered
6. Killzone collection
I would put Need For Speed Underground 2 and Carbon on here but I already know if those get remastered a lot of the songs in them would be replaced which might not be that bad depending on what songs are used.
Civ 3 with some of the AI functions overhauled (trade network calculation is what makes larger maps chug even on modern hardware) and pollution reworked/removed.
Morrowind. Just make it not constantly crash and trigger the DLC after one of the big questlines is completed, you don't need to change anything else.
Warioland for VB. Practically unplayable these days.
F-Zero Expansion kit for NSO, another one thats nearly impossible to play now.
I don't know why people say Bloodborne. The game looks and plays just fine as it is.
