The USA's website has it up for pre-order at the moment, and do all the EU sites.
Even in Portugal and Spain, which are among the countries in the world with the highest Playstation marketshare, you can just log-in and do the pre-order.

The OP mentions Australia, but the first retailer I found there that sells the console is still taking in pre-orders as of now.

I managed to secure 3 x 30th Anniversary Edition PS5 Pro's. Keeping 1, selling the other 2 for 5k each. Yes it might look bad, but it was so easy to get using a program, that not only bypasses the queue, uses 3 different accounts to purchase. Could have done more easily!
I know this will not be liked but I'm essentially 9k up with a PS5Pro 30th edition to boot. Most people would do the same!
